To make a Gluten Free Ginger Cake, just add eggs (or egg replacement powder) and margarine (dairy or soya) to make a 2 tier 7in cake.
The cake mix freezes well.
Also try making a very simple ginger microwave pud (mix as per instructions. Pour into 5 ramekins and cook in microwave on full power for 4 minutes. Leave to stand for 1 minute. Service with a sweet saurce and cream or custard). Or you can make a sticky Jamaican style ginger cake loaf in a loaf tin in the oven.
